Calcaire has arrived. What is Calcaire? Its a project that has been 4 years in the making.
In 2010 we decided we wanted to make the best Pinot Noir, Chardonnay and Riesling we
possibly could. So we went the whole way. We took extra care at pruning, threw in extra
shoot thinning passes, we cut off 30% of the fruit, we leaf plucked to allow extra sunlight
penetration, we trimmed any green wings off every bunch at Veraison, careful hand
harvesting, hand sorted every bunch to remove anything that wasn't 100% perfect.
The Pinot Noir and Chardonnay matured in French Oak for 15 months before bottling and
maturation for 2 years in our naturally climate controlled strawbale warehouse. The Riesling
was bottled in Spring of 2011 and has spent 3 years waiting . . .
The result - our Super premium, Icon Calcaire range of Chardonay, Riesling and Pinot Nor
from the 2011 Vintage.
The Chardonnay has already excelled - scoring 97pts and winning BEST
