What is <strong>Calcaire</strong>? Its a project that has been 4 years in the making.<br />In 2010 we decided we wanted to make the best<strong> Pinot Noir, Chardonnay and Riesling </strong>we<br />possibly could. So we went the whole way. We took extra care at pruning, threw in extra<br />shoot thinning passes, we cut off 30% of the fruit, we leaf plucked to allow extra sunlight<br />penetration, we trimmed any green wings off every bunch at Veraison, careful hand<br />harvesting, hand sorted every bunch to remove anything that wasn't 100% perfect.<br />The Pinot Noir and Chardonnay matured in <strong>French Oak for 15 months</strong> before bottling and<br />maturation for 2 years in <strong>our naturally climate controlled strawbale warehouse</strong>. I work for (and  with) truly amazing people, with an awesome product, in a creative  industry, fantastic customers and every day is different. The beer that made you &lsquo;turn your back on cack&rsquo;?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">I&rsquo;m not actually sure if it was any specific beer but I went from  drinking generic lagers and thinking beer was pretty ordinary to  drinking ales and thinking &ldquo;Wow! Flavour! Yum!&rdquo;</em><br /><span style=""></span><br /><span style=""></span> <strong style="">Have you ever had a beer that has totally blown you away? If so, what was it?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">I&rsquo;m a bit of a fan of NZ beers at the moment and I have said  before that I&rsquo;d like to marry and have babies with 8 Wired &lsquo;Hopwired&rsquo;  Fresh Hopped IPA. That shit is just delicious.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">What is your preferred style of beer and why?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">It depends on the context&hellip;whether I&rsquo;ve just finished strenuous  exercise (ha!) or quietly indulging on the sofa debating the problems of  the world with my best friends&hellip;every beer has a time and place.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">If I gave you $100 in cash right now with the only proviso being that you had to spend it on beer, what would you indulge in?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">I&rsquo;d take you out for a few drinks, Daz, for being so generous. Then we&rsquo;d drink a selection of NZ beers and a Goat or two.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">I have a large hoard of empty beer bottles and another of beer glassware. Do you have any beer-related vices?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">I dabble but no, I have to say other than insisting on having my  own beer fridge I&rsquo;m pretty laid back about beer. I like to drink it.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">In your opinion, where&rsquo;s the best place to grab a decent beer in Brisbane?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">Oh, man I can&rsquo;t choose favourites. Sorry. Too many. That&rsquo;s a great  problem to have I guess. It&rsquo;s exciting to see Brisbane is changing and  between breweries, bars and bottle shops you can find a decent beer  almost anywhere.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">What is so good about it there?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">Brisbane and greater QLD is finally opening it&rsquo;s mind and taste  buds to the idea of quality vs quantity. More and more young people are  spending their money on high quality flavour instead of just getting  shit-faced on fizzy, bitter water which is nice to see.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">Bottles or cans?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">Cans and kegs&hellip;not entirely different beasts really.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">What are your hopes for the future of Brisbane&rsquo;s craft beer industry?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">I hope to see more women brewing beer, opening and running bars,  and representing breweries. There is definitely an increase in women&rsquo;s  interest in drinking and talking about craft beer. Brisbane Chicks with  Ales (CWA) being a perfect example but for some reason it still seems to  be a largely male-dominated industry in Brisbane in terms of brewing,  representing, and running craft beer-orientated venues.</em><br /><span style=""></span><br /><span style=""></span> <strong style="">This isn&rsquo;t a job interview but where do you see yourself in five years time?</strong><br /><span style=""></span><br /><span style=""></span> <em style="">Married and pregnant to a delicious, little NZ IPA with little  throw-backs running around in my vege patch.
